Brown Bulgur gets it colour by retaining more of the shell of durum wheat than coarse yellow bulgur. This minimal processing also adds to the nutritional profile of the product. It has a light and nutty flavour and is a good source of iron, folate, vitamin B6, niacin, manganese and magnesium.
