Chickpea & Avocado Salad

Ingredients

  • 4 cups Organic IQF Chickpeas

  • 1 small red onion (diced small)

  • 2 cloves garlic (minced)

  • 2 limes (juiced)

  • zest of 1 lime

  • 1 green chilli (finely chopped)

  • 1/2 bunch coriander (chopped)

  • 1 avocado (chopped)

Serves

4 as a side, 2 as a main

Preparation

20 mins

Instructions

Prepare ingredients then combine in mixing bowl. Stir until some of the avocado has broken down and coated the chickpeas.


Serve with leafy greens.
