Red Lentil Protein Balls
1/2 cup Organic IQF Red Split Lentils
1/2 cup rolled oats
2 tbsp peanut butter
1 tbsp dark chocolate chips (or cacao nibs)
1/2 tsp vanilla bean paste
2 tbsp honey (maple syrup for vegan)
2 tbsp coconut flakes (optional)
Put aside chocolate chips and coconut and add all other ingredients to mixing bowl.
Mix well by hand or use stick blender, leaving some texture.
Add coconut flakes and chocolate chips and mix in.
Form into around 8 balls and put on tray in fridge for 30 minutes to cool.
