First we need to make the sugar into toffee. Toffee is a confection made by caramelizing sugar and sometimes butter. Put the sugar in a saucepan on a low heat. Do not stir but rotate the pan to avoid sticking.
Once the sugar has melted and caramelized simply add the sesame seeds into the saucepan and stir gently with a metal spoon.
Pour mixture onto greaseproof paper in baking tray and smooth out into a thin layer. Cool and break into pieces.
